The avocado salsa takes this BLT up a notch. Try using it instead of mayo on your favorite sandwich combinations.
Avocado Salsa (makes about 1 cup): (cut in ½ for better fat profile)
1 tablespoon chopped cilantro
1/3 medium red onion, chopped (about 1/3 cup)
1 small avocado, cut into 1-inch cubes
2 tablespoons lemon juice (about 1 lemon)
1 tablespoon olive oil
8 slices Lightlife® Smart Bacon
12 thin slices white bread (or your choice)
8 tomato slices
8 slices Lightlife® Smart Deli Turkey
4 leaves of romaine lettuce, each torn in half
Turn the oven on broil.
Place the cilantro and onion in a medium bowl and stir together. Add avocados and use a fork to mash, leaving mixture chunky. Stir in lemon juice. Cover and set aside.
In a 10- or 12-inch skillet, heat olive oil over medium-high heat. Add bacon and cook 2 to 3 minutes on each side; once crispy, place on a paper towel.
Place the bread under the broiler or in the toaster and toast until golden brown.
For each sandwich, spread avocado salsa evenly on 2 slices of bread. Break one slice of bacon into 2 pieces and place on top of bread slice with salsa. Add tomato, a slice of turkey and a piece of lettuce. Cover with 1 plain slice of bread and repeat filling for second layer. Top the sandwich with 1 slice of bread with salsa. (Each sandwich should use about 1/4 cup of the salsa.)
