Superfood Recipe: Quinoa, Beans, Greens & Veggies with Caesar dressing

Here’s a tasty recipe to try this weekend! Caesar dressing with quinoa, beans, greens, and veggies. Serves 4

INGREDIENTS:

DRESSING:
½ cup shelled hemp hearts
¼ cup water, more as needed for thinning
3-4 tablespoons fresh lemon juice
3 tablespoons nutritional yeast
2 tablespoons apple cider vinegar (optional)
3 cloves of garlic
1 teaspoon salt-free ground mustard (or Dijon mustard)
1 teaspoon mustard seed
¼ teaspoon turmeric
Black pepper, to taste

BOWL:
2 cups cooked quinoa
2 cups cooked kidney beans
8-12 cups baby spinach or kale
½ cup cashews, chopped
additional veggies of choice (chopped carrots, cabbage, broccoli, peppers, snap peas)

METHOD:
Place the dressing ingredients in a blender and blend until smooth.Add 1-2 tablespoons of water, as needed for thinning. Optional, to place the dressing in the refrigerator to chill for about 30-60 minutes to bring the flavors together.
Divide the ingredients among 4 bowls. Enjoy!
